Jennifer Carroll has a food, health and lifestyle Instagram page where she enjoys to share healthy, delicious and simple meals for people to follow along and help them on their own journey. She enjoys to recreate some of her favourite dishes but with a healthy twist. This led to her releasing her first book in March 2023 where she shared not only delicious breakfast, lunch and dinner recipe ideas but also the journey of how she turns her life around. After 9 years of living in London, a lifetime of a difficult relationship with food, body image and weight struggles, Jennifer left a violent relationship and returned home to Dublin with her then 2 year old son, Carter to begin a new chapter. Along the way she dropped 12 stone and gained a new life for her self and her son. Her Instagram page allows her to share her recipes and lifestyle in the hopes of helping others. She spends a lot of her time in the gym and enjoys to share some of her workouts, training schedules and tips there too!
